Mocha pudding Ingredients :
3/4 cup self-raising flour, sifted
1 tablespoon cocoa powder, sifted
1 teaspoon instant espresso powder
1/2 cup caster sugar
60g butter, melted
1/2 cup milk
Double cream, to serve
Mocha pudding Sauce :
2 teaspoons cornflour
1 tablespoon cocoa powder, sifted
1 teaspoon instant espresso powder
1/4 cup brown sugar
3/4 cup boiling water
How To Make Mocha Pudding
- Combine flour, cocoa powder, espresso powder, caster sugar, butter and milk in a bowl. Stir until smooth. Spoon into four 1 1/4 cup-capacity heatproof, microwave-safe dishes.
- Make sauce: Combine cornflour, cocoa powder, espresso powder, brown sugar and boiling water in a heatproof jug. Stir until smooth. Gently pour sauce evenly over batter in each dish.
- Place dishes on microwave turntable. Microwave on MEDIUM-HIGH (75%) for 5 minutes or until tops are firm to touch. Stand for 1 minute. Dollop with cream. Serve.
